Pancakes are more flexible, but a great waffle, when it is perfectly crisp, is a joy forever.

And there is a food truck down my street that specializes in waffles, both sweet and savory. The fried chicken sandwich using bacon waffles for bread is unbelievably satisfying.

Crepes are wonderful too! I was just down at the coast and there is a crepery there. No place to sit down -- they sell out of the window like a built in food cart. Savory and sweet crepes. The ham and cheese ones are so fucking good.
