Wow... I can tell my brain is exhausted and done for the week when I misread my own posting!

And what's worse? It was much funnier the way I misread it... I now read "Monkey hamsters" instead of "Monkey haters". I don't know what monkey hamsters are, but they sound interesting. 🙄🤣🤣
 
Where I am, it has a little bit of everything in it. Usually on canning day, any leftover veggies were chopped up and pickled with sugar, vinegar and spices then canned. It is delicious on pintos. Usually it consists of cabbage, carrots, onions and peppers.
Wait? Pintos the bean?
Do you cook them first?
Is the cabbage pickled like sauerkraut?
I have SO MANY QUESTIONS..... 🫶

Yes! Cooked pintos.

If you are pickling the chow, no cooking is necessary.

You chop the veggies up fine and the canning process also softens them.

The chow can be seasoned however you want. Sweet or savory. The vinegar will make it taste sour, like sauerkraut does with fermentation.
 
As a SAHM, I just had my first “days off” (time away from my kids) in two years and omg it felt so good.
I was MOH in a wedding, so I still had responsibilities but still… I had almost forgot what it felt like to only be dealing with adults all day 😅

So we put ripe red tomatoes, onions, and sometimes cucumbers.... Sugar and apple cider vinegar, on our cooked pintos AKA soup beans...
