Mashed, then in a casserole dish with pats of butter on top, 30 minutes at 350. The hard part is waiting long enough to eat them without burning your mouth.

Baby potatoes roasted dry, then smashed down, coated in butter, sea salt, pepper, and fresh rosemary, then back in a high temp oven/broiler to crisp them up.
