It's Gonna Be Me was written by Max Martin, Swedish producer and song-writer who is very very particular about how his songs are sung by the artists he writes for. So when he, in his Swedish accent, sang the song for N'Sync to demonstrate what he wanted and realized he was mispronouncing "me" as "may" (in swedish, me is mig pronounced as mej which is basically identical to may) he insisted that Timberlake keep that quirk in.

So in short; It's Gonna Be May is a Swedish mispronunciation!
