The date isnt as important as the condition of the can. If its expired, and the can is dented, leaking, or bulging, then its bad. You risk botulism, amongst other things. If its expired but the can is intact, the nutritional value starts to degrade, but you arent as likely to get sick.

My grandma worked for the OSU extension service for 40 years. I've been lectured ad nauseum on the subject. But i can pressure can the shit outta some tomatoes!
When it's about surströmming the people who love that rotten fish says that it's not done until the can is round. And anybody with a sane mind says that it can not be worse, ever!

Continuing a bit: If it's dented, leaking or bulging it doesn't even need to be expired to be unsafe for consumption. (Unless you just witnessed it getting the dent so you know it didn't happen days/weeks ago - and then you should open and use it now, not next week).

(I bet you also got this part of the lecture... But many don't know..
