Okay, I am brining this back up but I have one. In Tokyo, you get these little yakitori places everywhere. I mean, if there is room to sit down, chances are someone has set up a stand. And there was this one under a train station, just a little guy, two concrete blocks, a grate, and some briquettes. And cooking pretty much everything from the chicken skewered on a steel stick. Hearts, necks, liver, chicken skin until it was crunchy (which was astonishing, by the by), just everything. But the best were momo --chicken thighs. Nothing at all complex, just some Tare and salt, with dipping sauces on the side, but it was the most amazing chicken I have ever had. Black magic fuckery. That place was just so good.
