That's debateable. I prefer to do one before immersion to cook with all that flavor, and another one after to set a crust.

Leftover steak? I’m not familiar with that concept.

I don’t love leftover steak. Maybe because I like mine well done and it doesn’t reheat as well, but I just don’t. I’d rather get a small, perfectly-cooked filet mignon and enjoy it in the moment than end up with leftover steak jerky I’ll feel obligated to eat the next day 🙅🏻‍♀️
 
I grew up in a house where you could sole a shoe with our meat. I remember as a kid if there was the slightest hint of pink I WOULD DECLARE IT RAW AND DEMAND MY MOTHER PUT IT BACK ON THE STOVE. I look back in sadness at all the meat we ruined.

Since I've developed some dental issues I admit that my favorite steak is now filet. Easy to chew.
