I recent submitted a story “The Perils of Elena” several days ago.. It is listed as pending but have not heard anything back as of yet.

It can take a couple days. You'll know when it's been processed when the status changes to New and the next day's date.
 
It was taken over a week with no notice if it was rejected or published.

If it's your first story, expect a little longer. If it's still Pending it means it's not been looked at yet. Once vetted, it will either shift to New, or be rejected.

There's a story collection running at the moment, the 750 Word Project 2023 - those stories will be getting priority.

Could be the longish gap means you're being treated as a new writer, where a week or so can be typical (depends what else is going on).
 
We're in a heavily bogged-down submissions period. A heavily subscribed writing exercise is just completing and a regular themed contest is just starting up. Submission are swamped.
