I’ve never used fish sauce or cocoa in chili. I love trying new recipes so I’ll give it a shot.

I loosely follow this recipe but i add a lot more vegetables and beans. The recipe has good spice and sauce ratios so you get an idea of how much cocoa and fish sauce you need. Remember fish sauce is salty. I cook my veggies down a lot in a regular pot so they release some water and i reduce the chicken stock or just dont add stock at all to make up for the additional liquid from the vegetables.

I don't know you well but I have been favorably impressed until this post. Chili doesn't have beans. You must be talking about stew or a meaty soup.
