Bucatini is a thick spaghetti-like pasta with a hole running through the center. Hence the name, from "buco" meaning "hole". Bucatini all'amatriciana is a classic of Roman cuisine. Sugo all'amatriciana (Amatriciana sauce) is a sauce based on guanciale (cured pork cheek), pecorino cheese from Amatrice and tomato. I also add a little bit of red pepper because I like it spicy. It's very easy to make but the main ingredients, like guanciale and pecorino cheese, should be of good quality.

I agree, leftovers can be yummy. And they’re quick so there’s that. Some of us are having spaghetti, others are having grilled chicken. Then my daughter just made a bagel.

My supper was good and worked out great because I was busy with neighbors helping me swap a blown mower engine out for a new one. But dang if I don't believe that you made the best dinner of anyone here tonight. I'm very impressed.

Good thing the BF told me *after* I was done cooking what he paid for that meat.
I’d have died from performance anxiety.
Instead, I feel like I just performed culinary witchcraft over a hot stove :D
