What's cookin', good lookin'? Part II

Chicken thighs stuffed with ricotta, nettle and pine nuts, sauted veggies.

I also made donught holes, because it's what's done on 30 April and I prepped some stuff for tomorrow's brunch.

We can't do the traditional big May 1st picnic brunch in the park this year, because of the virus (normally thousands gather), but I still want to keep some of the traditions going. So a picnic brunch either in the backyard if no neighbors have reserved it yet by the time I'm ready with everything, or on the livingroom floor surrounded by my four (4!) house plants it is.

You are, indeed, from the old world. I've never heard of anyone in the USA using nettles in their cooking. I have read that it has been done, and was done here "in days of old," but now? I wouldn't even know where to buy them - and I live in the kind of place where you can find that kind of stuff. Sounds interesting - what do they taste like? In my mind's eye I picture them as being like rosemary or thyme - is that close?

A nice fizz and a taste somewhere between cider and lemonade.

I'm making salmon and broccolini for dinner today. Everything onto a baking tray and into the oven they go. So tasty and so easy. I'm thinking about making a poached egg to act as a sauce for it all.

Looking at a cold snap, so...

Going to make beef bourguignon. Easy-peasy, the oven helps keep the kitchen toasty (but I'll also light a fire in the hearth... why not?), the smell fills the house with a heavenly aroma.

Might get a few wisps of snow, even, which would add to the mood.

It's like spinach.

I don't think you can buy nettles here except dried, so I just pick my own. It's best to use the smaller, tender leaves.

I see some countries doing better than others, but I don't see a correlation with the gender of their elected leader. Ditto US States and their governors. There is a very strong correlation with party affiliation of the governor (i.e. "blue or red") and the death rate of that state, but I don't see one for gender.

What am I missing?

No, no, I know which EU countries (and global) are led by women. I just don't see them doing better, statistically. Germany seems average, for example. Norway's doing well, kind of. So, sure...

All of those countries are doing statistically much better than the US, even Germany which has more infected people but the state of their welfare system and health system is also astronomically better than the US. And Norway is doing fine with under 250 deaths for a population of over 5 million. Relatively similar stats for Denmark and Finland... so your point kinda falls apart. There is correlation, I'm not saying there's causation necessarily but still it's an interesting point.
 
Back to cooking.

Here's the dinner before it went into the oven. It was simple, quick and tasty. Perfect for days when I have zero interest in cooking.

I also had some vanilla and basil macerated strawberries with whipped cream for dessert. Another example of simple, quick and tasty.

What's everybody making for the weekend? Do you usually cook something special on weekends? I'd like to make something different, so ideas, please! :)
 
some restaurants have opened up. My kids took me for BBQ tonight for Mother's day due to their work schedules. It was much needed on my part.
But still thinking of firing up the grill for maybe a nice steak this weekend.
 
Broccolini!


This weekend is Mother’s Day in the US. A lot of people celebrate with brunch.
We are going to cook out on the grill, because, yum!

I still don't know what the special thing to cook this weekend might be. Might end up being nothing special at all. I went throught allllll the emotions at work today. I'm so wrung out.

I picked up a burger and some beers at my local and very favorite bar today. The burger wasn't amazing this time, because they've had to let their cook go and the owners are keeping it going by themselves at the moment. But it was a decent burger anyway.

I want to support the place, because I love it and I would hate to see it close for good. And they promised to bring back the good cook once this whole mess is sorted. :)

I smoke salmon seela, with Manuka woodchips and olive oil/manuka honey/touch of brown sugar for glaze. 25 minutes under the bbq hood, perfect.

And New Zealand
We seem to be doing well, Australia is on a similar trajectory to NZ, we may have a double country bubble in a couple of months.

Roasted broccoli is so good!

I'll cook lamb and salad today. Thinking about the dressing. Maybe something with berries.

I'd also love to bake something, but I really shouldn't eat any baked goods so I don't know.

I thought the state had opened up. Is this a self-imposed freezer/pantry cleaning?
 
If it makes you feel better, I have random bits of vegetables of various ages in my freezer.
"Oh, that's not enough for even one serving but I hate to waste it. I know, I'll use it in a soup at some point!"
