I was expecting something on the other side of the plate. It looked lopsided being off center with only that side of the plate used.

I thought it was interesting to learn that agar will keep the shape in heat while gelatin will not. I don't know about doing ketchup caviar, but it would be fun with something like raspberry. Or even pomegranate.
