It usually has a strong flavor (depending on what it was eating). A bit stronger than Venison, so it's really good in chili or stew. Bear is very lean, so if i'm grilling a burger, I mix it with some 70/30 ground beef.

I had bear one time down in WV.. A guy brought some in to work. I don't know how it was cooked, but it was excellent.

It depends on what the bear has been eating. A black bear taken in the fall from an area where there are plenty of berries tastes pretty darn good. One that lives near a salmon spawning creek, the taste is not-so-good.
