Fork the brisket after 4 hours, add a little more butter and wine to the juices, deglaze and whisk up, add shredded brisket back, stir, and set aside. Meanwhile, boil 1lb potatoes and 1lb parsnips. I’ve done something similar, only on the smoker with pulled pork and sausage, and a cap for the onions of buttery garlic-mashed blended with plenty of grated Parmesan and chives.

Your dish sounds delicious though, with some deep, rich flavours. I will definitely be giving it a whirl. Did you use red onions, or sweet white onions?

There's a maker's mark on the back and it looks like a professionally made (die?) That you stamp your work with.
