When I was a kid, my dad had a pair of elephant hide ski boots hanging up in the shed. I wish I still had them.
 
I prefer wool to polarfleece, except in mittens, then I prefer down
 
I don't own any modern fabric-ed garments. I mean I have shirts from Old Navy and whatnot, but I don't wear under armor type fabrics, or any micro thin type under layers that claim to warm you or cool you. A lot of this is marketed to motorcyclists but I stick with good old fashioned leather and tee shirts.
I do have a polyester "mid-layer" pair of pants that were hand-made in Colorado. It's not some Studio 54 shit....it's foofed up polyester and feels more or less like fleece jogging pants. When worn under some jeans they've kept me cozy into the 20's over night.

Maybe I should try some of these types of shirts?

My most impressive fabric is a pair of Wigwam socks that I got as a gift probably over 15 years ago. By the time I realized how special they were I had no idea how to determine what they were made of. I've bought other wigwam socks but none are like these. They are the color of unbleached cotton and are woven. Wigwam socks these days look like a hipster fever dream...nothing like the simple greatness of these socks. Girlfriends have come and gone...all loved to wear them on Sunday mornings with coffee....I wore them last week when I was sick and confined to couch. They are the warmest most comfortable things right here on earth for your feet. I've limited them to house duty only. I doubt I'll ever find another pair.
