My baby likes beets.

He said he puts them in kraut, so maybe he was talking pickled. I never heard of them in kraut.
 
Must be nice. Mine hates everything. Fights tooth and nail not to have to eat. But then I'll see her chewing on grass and shit. The only foods she seems to like are frozen foods like popcycles and ice cream and slushies. Which are all junk food. So... that makes fucking sense. My child.

But he mighta tried them somewhere else and/or be mistaking beets for something else depending on how old he is. Kids do that a lot when they're first learning vocabulary.

Beets and green beans have been on my table since my kids were young; they like that the beets dye their fingers red and I can't complain because they ate their veggie. Flipping little monsters avoid forks at home at all costs.

Beets are yummy. We mostly boil them and eat them. Use them in salads, sandwiches, soups and even the odd veggie pasta sauce.

I'd never even heard of pickled beets before this thread.

BTW by baby you're referring to your blue bird, right?

They are great served warm or cold. Sweet and yummy. You should try some, they're kind of a no fail veggie for cooking. Just wash, peel, boil and eat.
 
I boil them with the skin on. I find it's just easier to peel them afterwards.

I tried to make chips out of them once but they didn't turn out right (most likely because I didn't slice them thin enough).

I had it written wash, boil, peel and eat at first because I think the skin saves something, but after having listened to my sister bitch and moan about trying to peel them while warm when she was helping me prep dinner, I opted to change it for a first time beeter.

I don't enjoy prep work and my hands really can't exert a great deal of force (even though I have large man hands) so I find it easier to just peel them later. I prefer to keep my fingernails trimmed short so peeling them afterwards isn't that much of an issue for me as it may be for someone with longer nails and/or a french manicure.
 
Roasted with other root veggies like onion, turnips carrots. Cut into cubes, olive oil salt and pepper cooked until just starting to get soft. Delicious this time of the year.

I roast them, along with Cauliflower, in Olive Oil and sprinkled with salt and pepper.
They are soo good like that. You can roast any veggie at all in the oven and they are delicious.

Roasted Cauliflower tastes similar to Deep fried, IMO.

Grandpa goes to the doc. There is blood in his stool. The doc jumps right on it and does test after test. The old coot is healthy as can be!

It turns out that gramps had taken a sudden liking to beet juice.
