Wait...pH is low...where it's supposed to be. Adding a higher-pH acid causes lowered acid production...which causes buffer system to...Well, adjusts them. The pH of stomach acid is very low, so when you add a different acid of slightly higher pH to the system the buffers, till then responding to a very acidic environment, have to adjust and as such the acid production is reduced and the buffering is modulated. A little like the advice not to use cream on dry skin because you interrupt the skin's natural lubrication; if, like in the stomach example, you make the skin even dryer the natural lubrication is kicked up.

I still don't see it. Gimme a base to neutralize the acid.
In any case, the problem of heartburn isn't the pH; it's the effect of the acid on tissue. I'm wondering if those acidic folk cures don't somehow prevent reflux into the esophagus.

Natural buffers are balanced against your own acid production...though imperfectly, at times, leading to heartburn.
Add an external source of acidity and the buffers amp up, but also, more importantly, your own acid production decreases.
