A tasty breakfast

Last night I made my Chili Rellenos. Man did they turn out good. Of course I made too many of them so four ended up in the fridge.

This morning I was digging through the fridge and thinking about what to make for breakfast when my eyes came across the chilis. They happened to be sitting right next to the eggs. An idea began to form.

Out came the griddle and into the microwave went the chilis for a warm up.

For each Chili I cracked and beat an egg then poured it onto the hot griddle. As it fried I grabbed the chili and set it on the edge of the egg then rolled it in the very thin egg making a wrap.

It didn't take long to do this for all four chilis.

Oh man did that taste good for breakfast.

I have Green Chili Stew and eggs like Three times a week - if I made Red Chili it's Tamales and eggs.

I'm a Chiliholic...
 
Egads, that sounds tasty. I love Mexican and Denver omelets...and chili with anything remotely Mexican or just by itself. There is a large Hispanic community west of here where you can buy all the fixins' for a great meal...or eat in one of the many restaurants...I have yet to be disappointed. :D
