The quote from Exodus means that Jews should not charge other Jews interest if they're poor. All the rules in the Torah are meant to apply to Jews alone.

A lot of atheists don’t understand Judaism. They think it’s just fundamentalist Christianity without Jesus. Case in point: Manacheism is a Christian heresy. It doesn’t apply to Jewish morality. It’s no fun hating people who want me exterminated. I’d rather they just stopped trying to justify killing Jews.

Yes. If Israel did commit genocide I would oppose it. Fortunately that's not happening.

All I'm asking is for Israel to be held to exactly the same standards as all other states. For example, take the title of this thread. Israel accepting responsibility to a battlefield fuck-up is a good thing. If Israel were actually as evil as you believe they are, they would never step up and admit wrong-doing. And yet instead of praising Israel for doing the right thing in this case and admitting their error, you use their admission to further condemn them. That is unjust.
