There have been a good number of alternate history books exploring the different possibilities. The Nazis very nearly did defeat the Soviets. Waiting another year before invading, not wasting aircraft attacking the UK, building up materiel and transport, winterizing equipment etc. etc. etc. all could have changed history. There are also novels like The Children's War exploring a world where the Nazis and the Soviets avoided conflict.

As far as the Jews go, most likely they were just a convenient enemy to focus hatred, the way the Iranian imams and various tin-pot dictators in the middle east try to distract from their own appalling internal problems by ranting about a convenient target. The fascinating thing is that the Nazis mostly tried to conceal their plans for extermination (though not the persecution of Kristallnacht, etc.), while the Muslims openly say they want to wipe Israel off the map and kill all the Jews!
