I put a pork roast in the crock pot with a can of enchilada sauce, green chilis, cumin, ancho pepper, garlic salt, whole garlic cloves, and a bottle of beer. Shred.

After shredding I added the crock pot juice to it, garlic salt, ancho pepper and cumin.

I just looked up that recipe. What a scrumptious looking rack of ribs.

I have some Memphis dust in a jar in the kitchen, waiting for the next time I do ribs. I do have a new toy; an inexpensive egg-type grill that I hope will be a little better on the low and slow than my Weber natural gas unit. Of course, I have to wait for the burn ban in Anchorage to be rescinded. No charcoal grills are allowed. Thankfully, the natural gas unit is allowed so I can grill some chicken hindquarters for the fam today. We'll be having apricot glazed chicken.

In the works: a cake made with avocado and Chicken Meatballs.

This reminds me of an episode of Friends, when Rachel made a trifle, but the cookbook pages were stuck together. The trifle was also half shepherd's pie. I hope your avocado and meatball cake turns out well. ;)

The cake is pictured above and I *think* it turned out ok, but I haven't tried it yet.

The meatballs I taste-tested earlier and they are yummy.

Yum! That looks like something I need to purchase and try out soon. I have a few Rib rubs from different sources but have not seen that one before.

How'd the cake turn out? I haven't used avocado in a dessert yet, but I want to. I've seen some interesting ones.

I've never made chicken meatballs. I should try that. I'm making meatballs for a get together on Saturday, and it's always more fun to do something a little different.

I usually just throw the stuff together in a jar. SWMBO doesn't like black pepper and so, I modify the recipes to be minus black pepper. Typically, I'll add mild chili or chipotle.

This one is from Lowes. I do need to season the cast iron grate prior to a nice long cook. I've cooked on one a couple years ago at a wedding reception and it made some great planked halibut, but that can happen on any grill.

But we'll start out light and save the heaviest food dishes for last. One bowl of good hearty ramen & rice for brunch would lay you out on the couch in digestive bliss until midnight! :D
