I am not going to be much help; I just had a TV dinner that was a corndog, corn and chocolate fudge brownie (chocolate is a veggie right? ).

My daughter made chicken enchiladas. OMG, they are Picante!!

spanish rice and beans as a side.... not bad. It's the one supper that that girl has mastered.

oh If you don't have one get one. They're terrific! Use microwave. Perfect rice for 6 in 20mins.
