Making pork roast with potatoes and carrots.

I'm a lousy cook, but this is a difficult meal to fuck up. Probably won't be done by the time I have to go to bed, but at least my boys will have something good to eat.
 
I've got a chicken baking. I stuffed it with a lemon and some garlic cloves. I covered it with capers, lemon zest, sea salt, cracked pepper and olive oil. I added chopped onions and red potatoes to the pan. It smells heavenly!

I had a huge bowl of pho as a late lunch, so no real dinner for me tonight. However, I did order a banh mi to go from the same restaurant, so I'm good if I get hungry later.

I had a huge bowl of pho as a late lunch, so no real dinner for me tonight. However, I did order a banh mi to go from the same restaurant, so I'm good if I get hungry later.

I have no clue as to what pho is or banh mi is, but, as long as you liked it, that sounds like a great meal.

Pho is this amazing noodle soup from Vietnam. The broth is so rich, traditionally they take 3 days to make the broth. You add noodles, bean threads, Thai basil, slices of lime, hot pepper slices and a myriad of sauces as you like it. Then you can add thinly sliced, as in shaved, pieces of beef or meatballs. Its served in a ginormous bowl with the noodles. All the other ingredients are on the side. You add them as you like it. You usually get a selection of sauces like Siracha (hot pepper sauce), hoison sauce, soy sauce and fish sauce. You can add those as you like. It's really good, like hot soothing, fill you up good. The Vietnamese eat it two handedly. Slurping broth spoon in one hand and noodle grasping chop sticks in the other. I ate Pho in Philly a couple times a week for lunch because it's fast, cheap and awesome!
