What's for dinner?

I'm going to have nummy whole wheat pizza with marinara sauce, three cheeses, tomato slices, green and yellow peppers, sweet onions, a few olives, shrooms and little bits of broccoli florettes, with chocolate milk and a vitamin.

Dessert later will be cocoa and pumpkin pie ice cream.
 
Thick, boneless pork chops baked with pesto topping and diced tomatoes in the pan. VERY tasty.
 
Roast butternut pre-chunked squash for lazy asses and grass-fed burger.

Apple Curry Chicken:

2 boneless skinless chicken breats halved - about 1.25 pounds
1 cup apple juice
1/4 teaspoon of salt
dash of pepper
1.5 cups of plain croutons
1 medium apple chopped (I prefer granny smith)
1/2 cup finely chopped onion
1/4 raisins
2 teaspoons brown sugar
1 teaspoon curry powder
3/4 teaspoon poultry seasoning
1/8 teaspoon garlic powder (I substitute minced garlic).

Preheat oven to 350 degrees. Lightly grease shallow baking dish (about 8x8). Arrange chicken in single layer. Combine 1/4 apple juice, salt and pepper in a small bowl and pour it over chicken.
Combine croutons, apple, onion, raisins, brown sugar, curry powder, poultry seasoning, and garlice in large bowl. Stir in remaining 3/4 cup apple juice spread all over chicken.
Cover and bake about 45 minutes.

Garnish as desired.

It's quick and easy. You can add more curry if you like it spicy, as I do.

Sounds good. Apples are underused as a savory ingredient.

I was actually going to say something about using more curry powder until I got to the last line.
 
Took the 5 yr old out for chinese last night being that everyone else was at deer camp. Tonight I think I will make some venison medallions, with wild rice and green beans.
 
We ate at Boston Market last night. I had the 3 piece rotisserie chicken with red potatoes & cinnamon apples, and a piece of cornbread.

I wanted to try their pecan pie but ran out of room, so that was breakfast. lol :D

I just finished lunch of apples and peanut butter and cottage cheese...

for dinner.. I think we're having rotisserie chicken
 
I made a pasta dish the other day, and are having leftovers.

The pasta dish was made of:
1 onion fried
1 lbs of low fat minced hamburger fried up
3 peppers diced and added to the mix
5 ounce cocktail weiners
2 cans of crushed tomatoes
salt, pepper, paprika and chili

all of it made into a pasta sauce, to which I added quite a bit of liquid in from of water and milk. I then poured a lbs of uncooked pasta in a oven pan, poured the sauce over it, added grated cheese on top of it, and baked it in the oven for 20 minutes.
 
An awful fast food burger. :(
My bf never feels like cooking after work anymore so we've been having lots of drive thru & take out lately. I dont trust that stringy mystery meat you get at Burger King or McDonalds! Burger King is the worst fast food joint IMO cuz i cant taste the flavor of the food. I just taste smoke when i bite into their burgers & their bacon is like eating salt.

I do like going to Boston Market or Wendys every now and then though. Atleast their burgers taste like burgers, & if i feel like ordering something a bit healthier i can get a frescata sandwich or a baked potato.

First I went out with some gf's where I had pasta made to order.

Then I came home to Thanksgiving dinner. The parts I enjoyed of that were, mashed potatoes, turnip greens, butter beans and creme cheese stuff celery.
 
I'm having venison stew that the guys made for me from a recipe. They were curious as to what unusual foods i'd like & which i wouldn't.

I feel so much better knowing that they got this meat from a farm that raises only red deer instead of the cuter white bummed variety!

Herbed Spinach & Ricotta Strudel that I made yesterday with baby tomatoes sauteed in olive oil & garlic. It's going to take mere mins yipeeee !
 
Yesterday I had shrimpless gumbo (I can't do shellfish without getting seriously sick. But there was extra andoulle sausage in it, so it was HOT.) and red beans and rice. We had king cake made of carrot cake with NO raisins for dessert.

Tonight will be potato soup with grilled cheese sandwiches.
 
i bought these chicken and turkey meatballs ready made from Costco. They are sundried tomato and basil.

i think i will put them in sauce and have spaghetti and meatballs. Easy, fast and not TOO unhealthy.

i hope not, anyway. :eek:
