Tonight was the school's Thanksgiving dinner. Faculty served students~

So it was the usual turkey, stuffing, mints, potatos, corn, rolls, gravy, carrots, and pumpkin pie.

For once I am full....
 
My oldest girl is cooking tonight. She loves to. We're having chicken, potatoes, carrots and onion all roasted together. It's yummy, and easy to make. all I gotta do is take it out of the oven when it's done.

I cooked a terrific chicken and broccoli dish that has a curry yogurt sauce, cheddar cheese, and crispy bacon sprinkled on top. We had this meal for lunch because I've discovered I lose weight better when I eat the biggest meal at noon. For dinner I had cottage cheese and pineapple tidbits. :)

It was the turkey with broccoli and cheese sauce... followed by a bowl of rain bran cereal, a bag of microwave popcorn with extra butter flavoring, a cup of lemon yogurt and several chocolate chip chewy granola bars. I pigged out.
 
Made spaghetti with my homemade meatballs and sauce, and took out the prepacked loaf of unbaked bread and made freshly baked garlic bread, and some of my gardens snapped green beans that i had froze earlier. :p
 
Pasta, salad, eggplant, water and a mini Butterfinger for a chaser.

On topic - I had salmon, wild rice, and green beans for dinner last night. No idea how it was prepared, but it was delicious.

dining hall food.

it is SO hard to eat healthy when you have no kitchen, and crappy dining hall food.

It was very ingenius.

Apple Curry Chicken:

2 boneless skinless chicken breats halved - about 1.25 pounds
1 cup apple juice
1/4 teaspoon of salt
dash of pepper
1.5 cups of plain croutons
1 medium apple chopped (I prefer granny smith)
1/2 cup finely chopped onion
1/4 raisins
2 teaspoons brown sugar
1 teaspoon curry powder
3/4 teaspoon poultry seasoning
1/8 teaspoon garlic powder (I substitute minced garlic).

Preheat oven to 350 degrees. Lightly grease shallow baking dish (about 8x8). Arrange chicken in single layer. Combine 1/4 apple juice, salt and pepper in a small bowl and pour it over chicken.
Combine croutons, apple, onion, raisins, brown sugar, curry powder, poultry seasoning, and garlice in large bowl. Stir in remaining 3/4 cup apple juice spread all over chicken.
Cover and bake about 45 minutes.

Garnish as desired.

It's quick and easy. You can add more curry if you like it spicy, as I do.
 
blueberry pancakes.

its the first time i cooked food for myself in i dont know how long. between dining halls at college and my father being a fabulous cook who cooks to relax, i havnt had to make my own food in a while. true, i bake, but most bake-y stuff is dessert, not dinner.
