Acorn Squash in Roasted Apples

1 1/2 lbs.acorn squash, peeled and chopped
3 large pippin apples, cut in half horizontally and cored
1 cup chicken stock
4 tablespoons butter
4 tablespoons brown sugar
1 tablespoons heavy cream
1 tablespoon walnut oil
1 teaspoon cinnamon
1 teaspoon ground ginger

Preheat oven to 375 degrees F.
Cut squash in half lengthwise and remove seeds and fibers. Place squash cut side down in a baking dish. Pour the stock into the dish. Place in the oven and bake for 20 minutes.

Scoop out the fruit from the apples, leaving a 1/4 border. Remove squash from oven, place apples cut side down in baking dish, fitting them around the squash. Return to oven and bake until squash and apples are just tender, about 15 to20 minutes more. Turn squash and apples over. Dot with butter and brown sugar. Return to oven for 10 minutes.

Remove squash and apples from oven. Transfer apples to a warm platter and reserve, covered. Scoop squash flesh into a medium bowl. Mash with the cream, walnut oil, cinnamon and ginger, adding salt and pepper, to taste. Scoop the squash into the apple halves and serve.

Nachos with Pickled Jalapenos

PICKELED JALAPENOS:
1 dozen hot chilies
2 cups white vinegar
3/4 cup sugar
1/2 tablespoon pickling salt
1/2 tablespoon mustard seeds
1/2 tablespoon celery seeds

Bring to a boil. Reduce heat and let simmer for 15 minutes.

NACHOS:
8 tortillas cut into quarters
1 cup vegetable oil, for frying
1/2 cup yellow cheddar cheese
1/2 cup jalapeno jack cheese
1 pint cherry tomato, quarters
1 cup chili con carne

In an ovenproof dish, layer chips, cheese, tomatoes, chili con carne. Broil about 4 minutes or until cheese is melted. Serve with sour cream, salsa, and chopped onions (optional).

Kahlua Cake

1 pkg Devil's food and pudding cake mix
1 C sour cream
1 C Kahlua
4 eggs
3/4 C oil
1 6 oz pkg choc chips
1 C walnuts, optional



Beat first six ingredients together. Add chips and nuts. Pour into a greased and floured bundt pan. Bake 50 to 55 minutes at 375°. Cool 10 minutes and remove from Fran. Best if stored a day or two before serving. Good ole Fran Herb!
