Baked lemon oregano chicken and brown rice with a vinaigrette tossed salad of romaine, red onion, feta, cucumber, and tomato. This will be followed a bit later by a dessert of lime sorbet topped with raspberries and blackberries.

Beef lasagne and meat free lasagne, rocket, spinach and baby leaf salad, coleslaw, garlic bread. Followed by apple crumble with a choice of custard, cream or ice cream.

Scallops with pancetta and brussels sprouts. (Sounds odd but was quite delicious!) Chocolate chip Cookies (almond flour, pecans, no sugar).

I'm on a sugar elimination diet (hypoglycemic issues). I have to say its amazing how good the recipes are! :)

Eggplant parm with Caesar salad, Italian bread dipped in garlic steeped olive oil, and wine.
 
Roast beef/soya mince cottage pie, roast potatoes, broccoli, carrots, swede, garden peas, cauliflower cheese, Yorkshire pudding. Butterscotch pudding for dessert.
 
MMmmm that minced cottage pie sounds yummie, if I could only handle beef...


Never had collard greens before. Going to be mixing them with my whole wheat pasta. (Basically treating them like spinach)

Supposedly collard greens are a potent modulator of the innate immune response system with potent antiviral, antibacterial and anticancer activity, but they also thicken the blood so I won't be eating them daily.

Curried shrimp on cauliflower rice.

One more yummy installment in the parade of no sugar, no grain meals. Must admit, the cauliflower rice had me...trepidatious. It turned out surprisingly tasty!

They're terrific with my favorite strategy, stolen from local greek restos - shred, wilt in olive oil in a pan, add lemon. Chard, collard, kale, spinach, nobody's unhappy like this.

Thanks Netzach! I think I will have to try this. Sounds too easy and too delicious to pass up...
