Grilled pollo asada served with a veggie garlic sautee of mini portabella, asparagus, broccoli & fresh baby spinach and grill warmed flour tortillas.

So far today...breakfast scramble in olive oil of eggs, spinach, broccoli, asparagus, portabella mushrooms, feta, onion, garlic, and feta topped with salsa fresca. A side of cantalope and a cup of fresh coffee with the indulgence of real half n half stirred in.
 
Filet mignon, green beans and double baked potatoes with a creamy pepper sauce.
Santa Ana Reserve Malbec/Shiraz, which was yet again absolutely delicious and spot on with the food.

Lemon tart and peaches with light syrup.
Some rather sweet Cava, which was great with the dessert, but ghastly when drunk on its own.

It was our last supper, so to speak. I'll be leaving the country on Tuesday and tomorrow we'll be eating over at my parents' place. But cooking together was lovely, again. Simple and tasty, the best kind of cooking.

Dinner was even better than I expected!
 
For a snack, I tossed some cubed jicama with some lime juice, paprika, salt, pepper and a little bit of cayenne pepper.
 
Trying a new chicken parmesan recipe.
Trying to decide between alfredo and pesto for the noodles.
Garlic bread, duh.
And probably coffee and chocolates for dessert
 
Craving Grandma-esque comfort food...so tonight...Meatloaf with plenty of ketchup, garlic smashed taters, & ceasar salad with tomatoes.

Poached sole in a lemon-mango cream reduction with a touch of sweet basil
Served with a steamed mixture of green beans, yellow beans and julienne carrots and a baked potato.

My mother in law does an awesome "red, white and blue salad". Berries as above, white chocolate wafers all mixed with cool whip.

*facepalm as she suddenly realizes she FORGOT that she had whipped cream for her berries.*

We're celebrating #3s birthday tonight, and oh.sweet.jeebus is this new chicken recipe good.

Spatchcocked Chicken
(the kids have nicknamed it "Chicken a la Roadkill)
Mashed Potatoes
Corn
Green Beans
Yellow Butter-crumb Cake w/ Chocolate Frosting

The best part is that I just fed a family of 6 (with 2.5 teenagers) with a cheap 5# broiler... and still have enough leftovers for 2 meals for myself this week, plus an entire chicken frame to turn into chicken noodle soup tomorrow.

Tonight it is....Santa Maria style tri tip, roasted asparagus, watermelon, and a simple green salad with carrots, tomatoes, fresh mozzarella and a light vinaigrette.


and for dessert...Pumpkin pie, vanilla mousse, and whipped cream.

Peeking here made me hungry, and I just had lunch! I copied CM's chicken recipe to my email and I'll try that one out once I'm back in Finland. My cooking facilities here are lacking, to say the least, so most days I eat out. I really miss cooking and baking!

Lunch today was flaczki (soup), which, besides your standard soup meats, included parts of stomach and some other bits of cow that I didn't recognize, probably should ask someone. And pyzy, which are horrible potato-wheat balls, with the consistency (and taste) of semi-dried paste. I'm pretty sure you could hang your wallpapers with bits of pyzy.

I need to remember to steer clear from pyzy, I just cannot deal with the mushy chewiness of them, no matter how many times I try.
 
Garlic herbed pork roast, smashed red potatoes with feta, and broiled cauliflower,broccoli, and carrots with garlic.

And for dessert cinnamon apple oatmeal cookie cobbler with french vanilla ice cream.
 
Made some comfort food from my youth tonight as I am missing my Grandmother deeply and this is one way I can bring her back into my day for a little while.

Classic meatloaf smothered in ketchup, peppered, mashed, and whipped potatoes, simple green salad with croutons, onion, mozzarella and Italian vinaigrette, and for dessert sliced strawberries sprinkled lightly with brown sugar and a dollop of sour cream.
