What's cookin', good lookin'? Part II

You guys make me ashamed of skimping and only doing the bare minimum cooking.
My hours at work have gone crazy so I only get to cook on the weekend now and I try to cook so I have meals ready during the week.
Today I only cooked up some bacon for BLTs since I'm trying to finish my mini kitchen reno before Thanksgiving. Tomorrow I paint cabinets but I'm screwed doing much for the rest of the week as the new handles and pulls won't be delivered until Thursday.

I'm thinking fish and chips for tomorrow. Then I'll throw some leftovers in a pot for some kind of soup for the week.

Cauliflower soup with smoked salmon, eggs and fresh oregano. Chocolate coconut cake for dessert.
Guests have left and I shoud work a bit, but I think I’ll stick with the absolute minimum. I really don’t feel like it.

Homemade tomato soup plus chickpea salad on rye. I usually use fresh tomatoes to make soup, but San Marzano toms work very well too 😋

Roast beef with pickled cauliflower and red onion, mustard, maché, baby chard and lollo rosso.

Polpette di agnello con sugo - lamb meatballs made with pesto genovese and served in tomato sauce with roasted vegetables.

I haven’t been around much. Life’s really weird sometimes. I recently learned I have some allergies and one of those allergies is soybean. Which I love. Like all the soy products are my favorite: tofu, natto, miso, etc. It has taken me some time but I’ve found some replacements and pictured below is a veggie pancake with a soy-free miso soup. It doesn’t taste exactly the same but it hits the spot. :)
