What's cookin', good lookin'? Part II

It was the first time making it at home for us, but it turned out great.
The first time we cooked oxtail at home, J dropped the ceramic dish when he took it out of the oven. The dish broke, fatty red wine sauce stains all over the kitchen. It was absolute hell trying to get it all cleaned. So slippery and so staining. I don’t think we ever did get it all cleaned, to be honest.

But the second time we cooked oxtail it turned out great. 😁

Ugh, those kinds of spills are the worst.
You think you got it all cleaned up and then, 4 years later, you find more splatter on the inside of a cupbord.
 
I cooked this weekend and made chili, ham and beans, lasagna and applesauce... I froze the leftovers in single serving sizes... I was able to share with my mom all the bounty (she is 83 and isn't a fan of cooking so much anymore) and now her freezer is filled up again with home cooked meals..... I love my mom
 
I made 2 pans of chicken enchiladas with a side of Spanish rice.

We have a meal for later this week and I put 3 meals each in the freezer.

Homemade chicken soup yesterday with p!entry of leftovers.

Oh, and cheese grits with a fried egg for breakfast today.

Fun day in the kitchen!

I’ve been thinking about making chicken soup some time soon, too. It’s that time of the year here. What do you put in yours?

Tomorrow is game night at my old workplace (Gloomhaven: Jaws of the Lion, yay) and I want to bring something. I’ll probably bake cookies, courtesy of my weird cookie email dream. I’m thinking white chocolate&salted peanut. Might make something with lemon too, if I have the energy.

I put in garlic, shallots, celeriac, pastinak, carrot, leek, a generous splash of dry sherry, tumeric, ginger, rosemary, thyme, lemon, water and a whole chicken.
To serve, I shredded the chicken and added fresh veggies, chick peas and soup pasta and chicken stock, salt and pepper and an extra dash of lemon.

This sounds so delicious, especially as I just pumped out a ton of white chocolate cookies (not good, way too sweet despite the salted peanut and a dash of salt and a squeeze of lemon juice I added that weren’t in the recipe 😔) and spoon cookies (always good). I went a little untraditional with the spoon cookies this time and made them citrusy opposed to the traditional apple or raspberry. I need something savory now.

Spoon cookies are simple cookies made with burnt butter and shaped with spoon, two halves form one cookie, jam in between.

This would be a good opportunity to try that flambe!
Mmm, can’t beat that minty lager flambé.

White chocholate can turn on you, that way.
Savoury, hearty sounds like the way to go.
For us it will be salmon in a tomato and youghurt sauce.

Is it Finnish lager or tooth paste that contributes the alcohol content for flambé?:D

Chili and cornbread.

The high today is only 54, the first time it's dipped down below 60 this fall, and while I'm comfortable, my mother is all, "I'm cold." She suggested the chili. I agreed because it was easy enough to throw all the ingredients in the Crock Pot and forget about it until it was time to make the cornbread.
 
I made dal for tonight with red lentils, ginger, onion, garlic, tumeric, lemon, chili and some vegetable broth.
Really looking forward to eating it tonight!

I’m having leftovers from pasta bake J made yesterday. He’s currently curling. 🥌

Warm salad with roasted root veggies, chickpeas, spinach and egg on the menu tomorrow.
 
Love this! Not something you often hear in NJ.

Made homemade hummus, cut up peppers and broccoli for dipping. Quick and easy dinner.

I had a sewer board meeting (yes that's a real thing) so tuna salad sandwich for dinner.... an oldie but a goody

Those are both favourites here.
Well, the tuna salad sandwich and the hummus with veggies (and shredded chicken, because teenagers) for dipping. Not the sewer board meetings, however necessary and useful they may be.
