We had fish soup made with saithe, shrimp, mussels, saffron, white wine, celery, parsnip, carrots, leek and dill. It’s been way too long since I made it.

I made the fanned eggplant with tomatoey paste thing some time ago and posted about it here. Edit: here's the thing I meant.
I've since made it again but instead of tomatoes, bell peppers and such, I used artichoke hearts, almonds, arugula, lemon, onion, garlic and herbs for the paste/stuffing. It was very good. Just an idea, don't remember if you like eggplant or not.![]()
Yesterday:
Jerusalem artichoke soup with toasted sunflower seeds and ground black chanterelle.
Roast beef, carrots, candy cane beets, green beans, pepper sauce.
Yogurt with honey and cloudberries for dessert.
Today:
Leftover beef and veggies.
Bread rolls made with the leftover soup.
