Sounds delicious!



Yum, my kind of summer food. I also do senapsill/mustard herring with or instead of matjes sometimes.

It's the last warm day here today, I'll get to cook soon!

Cooler forecasts here too with lots of rain.
Wasn’t even that hot today, 28°C at most. Just a wet, opressive blanket feeling.
It was at least as hot when we were up north but way less humid.
 
I hope we won’t get the floods from Central Europe… Lots of rain coming here too.

It’s funny how the perspective changes. Normally temps like 27-30 would be too much for me, but this summer we’ve had weather like that for a long time and I’ve acclimatized. A while back I had plans to do something, looked at the forecast and thought “oh perfect, it’s only 28C, let’s do this thing!”. Hard to believe I’ve gotten used to temps like that.

And today’s cooking is a veggie noodle thingy.
 
Warm tater salad:

Baby Yukon gold
Fresh basil
Fresh dill
Fresh mint
Fresh parsley
Garlic
Thinly sliced scallions

Vinaigrette- olive oil, red wine vinegar, Dijon, salt, pepper.

Cool taters and mix, squeeze a lemon and adjust seasoning. Serve at room temp.

Can add 🥓 (I will do that next time!)

St Louis ribs with his rub and glaze. (I know what I said!)
Local sweet corn on the cob
Garden cuke and garden tomato salad with more fresh dill, fresh mint, fresh oregano, oil and vinegar, salt, pepper, diced red onions, imported feta.

What are your favorite pressure cooker ‘dump’ recipes? I’m looking for quick, easy, and healthy.

I’ve been relying on soups and simmered recipes recently and I’m looking for new ideas. :)

My go to is a roast with beef broth, a bit of apple cider vinegar, Worcester sauce, bay leaves, and whatever other herbs and spices sound appealing at that moment.

I also put red kidney beans in a crockpot for when I make red beans and rice.

Chicken or pork in one can be shredded and used for BBQ, tacos, and really just about anything.

I wish I had more ideas and even specifics for you. I just kind of throw stuff in when I use one.

Oh yeah, I do the same. Just throw stuff in and hope for the best. It usually works. :) I have found that there’s some fun methods for cooking a meatloaf and mashed potatoes in the instant pot at the same time. I tried it and it turned out good. I don’t have the energy for some of the steps though so dumping and forgetting is key right now.
 
garden is gone

I thought I could have a garden this year, however the local deer discovered what I had planted and came for the feast. Only one Basil plant survived, probably due to it being surrounded with Foxglove plants. I thought the wall of foxgloves would stop the deer, but while they will not eat them, they just trampled there way through to dinner. Any one want to have a Bambie? Please come on over and help yourself.

I haven't tried an instant pot. I was actually thinking about making meatloaf tomorrow. I rarely put potatoes and carrots in with a roast. I really like to cut up the roast for sandwiches on no knead bread. Discovering no knead bread was awesome because I just mix it and let it sit. If it may be a while before I bake it, I put it in the fridge.

I should have spent today making some burritos with sausage, potato, egg, spinach, and mushroom filling to freeze for when I don't have time to make stuff.

I'm going to try to think of more crockpot stuff. The easier cooking is, the better lately.

Maybe more novelty but it’s so fast compared to a more traditional baking. No knead bread sounds great. I made split pea soup in the instant pot with a baked sweet potato side and it was delicious and filling. I was so tempted to have bread but just couldn’t be the one to make it.

That sounds delicious! I am torn about getting an instant pot or an air fryer or both. I don't have a lot of counter space but I have thought about getting both. It would be nice to not warm up the house when it is so hot.

I'll answer for me...I'm old enough to have seen any number of kitchen gadgets come and go. They come to market in time to create some pre-Christmas buzz, have their day in the sun, and then slowly fade away, eclipsed by the Next New Thing. Meanwhile, serious cooks keep turning out delicious meals with equipment (with a few exceptions) their grandparents used.
 
I'll answer for me...I'm old enough to have seen any number of kitchen gadgets come and go. They come to market in time to create some pre-Christmas buzz, have their day in the sun, and then slowly fade away, eclipsed by the Next New Thing. Meanwhile, serious cooks keep turning out delicious meals with equipment (with a few exceptions) their grandparents used.

That's also part of the reason I haven't bought either. I do like the idea of the speed a pressure cooker works. However, as long as I plan, I can typically use a crock pot for the same thing.
 
I actually purchased an air fryer toaster oven combination that has been helpful this summer.
I will admit I use it more for baking since I don't have to heat up the big oven although I've used the fryer some.
I don't think I need an instapot so will stick with this.

I use a toaster oven all the time. I just wish my cornbread iron skillet fit inside it which means I should probably buy a slightly smaller iron skillet.

I’ve heard great things about air fryers but I’ve read it doesn’t really reduce the oil/calories in “fried” foods. I haven’t looked into that further, though. :)

I so wish I lived nearby so I could help you out. I have a couple of friends that battle chronic pain and fatigue among other things. I'm glad the instant pot helps with food.

So interesting to think about how air fryers may not really reduce the oil content. Of course well fried foods aren't soaked in grease so that would make sense. I don't fry food at home because I don't want to deal with all of the oil plus I'm trying to make more healthy choices.

I can't really cut up sweet potatoes. Maybe I need my knives sharpened.
 
It might not have been authentic Pho, but it was close enough for me. I've got bald sweat.
 
I made a really good shrimp stir fry in the wok, but we ate it all before pics.
Sesame oil and a little red pepper flakes in the wok, add the shrimp, add garlic, a smidge crushed ginger, scallions, oyster sauce, fresh basil, broccoli and string beans.

Omg.

That sounds sooooo yummy.

Tonight I made a paleo unstuffed cabbage. It was delicious but I'm paying for it as my kids fart uncontrollably and laugh hysterically. :rolleyes:

Cabbage, beef, tomato sauce, garlic, onion, and caraway seeds cooked together in Dutch oven. Mmmmmmmm. Easy recipe and big flavor!

No rice.

First saute the onion in olive oil, then add the meat. Cook until almost completely browned then add sauce, cabbage, garlic, and seeds and cook on medium heat for about 15 minutes, stirring throughout.

It's like a soup. 🤤

Sally, I use cauliflower in mine. You just have to cook it a bit longer to get rid of the excess water from the cauliflower but I like it better than without.
