Long stemmed cauliflower and broccoli, no idea what they're actually called in English. Roasted. And chicken thighs with balsamic syrup glaze. Turned out really good with almost zero effort.

I’ve never heard of long stemmed cauliflower, but long stemmed broccoli could be either broccolini, or broccoli rabe.

Beans on. I do this once a week in cooler months...always there when the munchies hit. And soooooo good!
 
I made crazy good bean soup a while back. My mouth still salivates just thinking about it. I don't know how it turned out so good, but it was just amazing! I wish I had used a recipe so that I could recreate it.

Today's dinner is eggplant rolls/logs stuffed with feta and basil and then baked in the oven in tomato sauce. I'll make a salad of marinated chickpeas, red lentils and herbs on the side.

But honestly I just kinda wish I still had some of the bean soup.
 
Hmmm. Made a 15 been soup on the weekend. Crazy packaging said sort beans and rinse. Took forever to sort but finally got them all washed and on the stove. OCD was pretty high that day but it turned out good with fresh cornbread and peach chutney.
 
It was meant to be goulash but instead turned into a bit of a stew. Good stew but definitely not goulash.
 
I've been enjoying making buttermilk biscuits, pizza and baked ziti now that I have a working oven again!

On the Ziti, I have to admit that I dislike ricotta and usually use Greek yogurt instead. Didn't have it this time but I did have some pizza cheese left over and some feta. OMG! So good!:)

Was trying to find a recipe that used refrigerator crescent rolls and avocado. It was served to me at a Pampered Chef party that a work person invited me to in 2011. I had a sudden craving. You know those damn things you think you must go to because someone at work who is over you expects it? OMG. :eek:

I thought I had a well equipped kitchen until I decided to replace a couple of old, frazzled spatulas, and picked up a silicone version on a whim. Wow! Turning eggs is fun!
 
Hand pulled pork.

I put half aside to cook with green pepper and onion for burritos and I put the other in barbeque sauce and let it continue to cook for awhile.

Tomorrow we shall dine well! That is if I can stop sampling and tasting.
 
Fennel, salmon and false morels. Nom nom nom.

And my usual disclaimer here: I know how to delethalize false morels and can eat them without fear of dying. :D
 
Lunch: arctic char, false morels, asparagus, spinach.
Dinner: harissa coated eggplant, marinated green beans, couscous with random things. Reese's peanut butter cup and rye for dessert.

Pasta with peas, feta, garlic, basil and lemon. Didn't really feel like cooking.
