What's cookin', good lookin'? Part II

Midnight, got the munchies...pasta, olives, green onions, and pesto. *burp*

Mmm, pasta! Pasta might be on the menu for me today.

I roasted spaghetti squash yesterday and topped it with chicken mince in tomato sauce spiced with cumin, nutmeg, cloves, cayenne and smoked paprika. It turned out super yummy!

And last weekend was the yearly crawfish / end of summer party with friends. We had very bad luck with weather this year and had to be indoors, but it was fun nevertheless.

Crawfish, gubbröra, and quiche with veggies and moose sausage for the ones who are not huge fans of crawfish. And home made malt bread.

For mains we had some more seafood. Sugar-salted perchpike, different kinds of herrings and vendace, and I smoked a whole salmon myself for the first time ever! I liked it! And of course potatoes, because this is Finland.

The dessert was an apple and oat crumble with custard, but I don't have a pic of it, because I was too boozed up by the time dessert rolled around to remember to take one.

Salad with Gouda, black olives, cucumbers, orange peppers, mixed tomatoes, Romaine, Craisins and almonds. And last night's soup which is Risi Fagioli.

Bean soup. Yoghurt with blueberries, toasted almonds and honey for dessert.

Beet root soup topped with blue cheese and croutons.

And a vat of Shiraz. No more, no less. A vat.

Lamb and Brussels sprouts with rowan berry jelly.

Cooking Brussels sprouts always makes me think of LallyH.

I made chicken with napa cabbage, onion, shredded carrots, and a tiny bit of Szechuan sauce.

Chicken, sprouted brown rice Risotto with chives, vegan corn muffins, a really good salad and vegan brownies. We're not vegans but you do not want to know what eggs do to me. Heh.

Beet soup with rosemary&garlic seasoned croutons.

Roast beef with roasted parsnips, beets and potatoes, sauteed yellowfoot mushrooms and rowanberry jelly.

Poached pear with gorgonzola mousse, glaze/syrup/sauce/thing (ie. reduced poaching liquid) and gingerbread crumbs.

No Mac and cheese? Seems like a missed opportunity!

Lo and behold! I made mac and cheese! For the first time ever! It was good! Exclamation point!

Roasted fennel, onion, apple, bacon, all kinds of leftover cheeses from the fridge. And macaroni.

1st gumbo of the year. Chicken and sausage with pork Tasso.
Potato salad, French bread and cold beer.

We splurged last night.

I made chicken fried steak, gravy, mashed potatoes and creamed corn. To all those not from Texas or Oklahoma, you just can't understand what a comfort this meal can be. I know there are other areas that try to claim this meal, but I feel these two states own it.

Tonight is steak, roasted taters with fresh parsley, dill and garlic, spinach tomatoes and balsamic salad, and sautéed mushrooms.
Vodka.

I made my very first pumpkin pie!

So much effort - I have a blister from peeling and processing a gigantic pumpkin. But it tastes good. Worth it!
