These both sound amazing. I've never had a pesto made with carrot tops. Do you just substitute them for the basil? And harissa eggplant? OMG! Yes, please! Now I have to find that recipe too...I saw eggplants for sale this week somewhere.
Yes, I substitute carrot tops for basil and this time I used walnuts instead of pine nuts, because I had plenty of them waiting to be used. Garlic, lemon zest and juice, olive oil, a bit of water to thin it out and salt and pepper to taste. It turned out good, I've been eating it on top of rye bread.
For harissa eggplant I just coat the eggplant in harissa and either pop in the oven or pan fry.
I wish I had something interesting to post, but my meals have been rather simple lately. We had grilled mackerel with an arugula salad dressed with wafu dressing last night. Tonight was mixed rice with edamame, shiitake, carrot, and Abura-age.
It's not like the meals I've posted have been special or that interesting! And I think what you just described sounds interesting. Definitely not what I commonly have!
