What's cookin', good lookin'? Part II

These both sound amazing. I've never had a pesto made with carrot tops. Do you just substitute them for the basil? And harissa eggplant? OMG! Yes, please! Now I have to find that recipe too...I saw eggplants for sale this week somewhere.

Yes, I substitute carrot tops for basil and this time I used walnuts instead of pine nuts, because I had plenty of them waiting to be used. Garlic, lemon zest and juice, olive oil, a bit of water to thin it out and salt and pepper to taste. It turned out good, I've been eating it on top of rye bread. :)

For harissa eggplant I just coat the eggplant in harissa and either pop in the oven or pan fry.

I wish I had something interesting to post, but my meals have been rather simple lately. We had grilled mackerel with an arugula salad dressed with wafu dressing last night. Tonight was mixed rice with edamame, shiitake, carrot, and Abura-age.

It's not like the meals I've posted have been special or that interesting! And I think what you just described sounds interesting. Definitely not what I commonly have!

Last night I made salmon, zoodles with spinach and mushroom, and cucumber salad. I am obsessed with zucchini.

Yum! Everything you listed are some of my favorite ingredients.

Yesterday I didn't really feel like cooking just for myself, so I just made a quick peasoup of frozen peas and topped it with some goat cheese and toasted almond slices.

Today I need to use the rest of the eggplant, so I'm thinking maybe pasta with cherry tomatoes and some more of that goat cheese.
 
Baked chicken breast with grape tomatoes and corn on the cob. I’m doing a one pan dinner tonight. The store didn’t have smaller packages of chicken so I’m baking all of them. The leftover chicken I will use to add to different meals throughout the week. One thing I look forward to is easy chicken quesadillas. :D

Grape tomatoes are so good!

Yesterday I had an omelet with goats cheese, peas and spinach. Not super exciting. Today I'm making cauliflower, chickpea and cheddar balls and having them with salad. Also not super exciting. :)

The balls sound good. :) That’s something I’ve never heard of making. Last night I made vegan chili with sweet potatoes and black beans. Mister ate most of it. For fun we had some flour tortillas. The meal was quite satisfying.

The balls are pretty good and really easy to make. I've often made them without chick peas, now added the chick peas because I had to use up some. The texture was better without them, but the flavor was excellent.

I love sweet potatoes and black beans together! Such a tasty combo.

I'm making biff a la Lindström today. Go Sweden, I guess.

For today’s holiday I’m making potato salad, grilled corn on the cob, and probably a green salad of some sort to go with the hotdogs and bratwurst. :) For dessert a fresh strawberry crisp.

Sadly, it’s raining so I’m not sure about fireworks tonight.

Ooh, that sounds good and looks even better! So is a strawberry crisp the same thing as a cobbler?

I had a horrible day yesterday and today doesn't look much better. So very little cooking took place. I bought a rotisserie chicken yesterday and had some with a salad, and the same thing is probably on the menu today. If I find myself feeling particularly ambitious, instead of a salad I might use the chicken in tacos today. If not, that's what I'll be making tomorrow.
 
Asked my mom what she wanted me to cook for her birhtbay dinner...and even though we are in a middle of a heat wave, she wants a full on German sauerbraten, swiss noddles, mash potatos, and a carrot cake! I guess thats what I'm making!...:cattail:

I have a pizza in the oven right now. Eggplant, tomato, mozzarella, basil and prosciutto.

For many it’s a bit of an adjustment both texturally and taste-wise. The texture is slimy beans. The flavor? Nutty? Fermented? I’m really unsure of how to explain it. I did find that some people have started making their own in places they can’t find is commercially available. :)

I don't think I'd dare make it myself before having tried it somewhere. I've heard so much about the weirdness of it that I'd like to have a point of reference before giving making it a go. :)

The pizza was really good! I should have worked the dough a bit more, but I was too hungry. Tasted so good, though.

Cukes! I've been basically inhaling them whole recently. If that sounds like a weird deep throat reference, I'm not sorry.



Yesterday's dinner was oven baked salmon with fennel and peas.

I also made a zucchini and feta quiche yesterday, so I'll have that and some salad for lunch and probably also for dinner today.
 
I recently had a bad situation with food that has caused me to really think about my diet. It’s weird and complicated so I’m doing as well as I can. Tonight I had baked chicken breast, steamed broccoli heads (no stalks), and carrot soup which was essentiallly boiled and puréed carrots with some salt and grated ginger (later a bit of coconut milk).
 
A few friends dropped by with no previous warning and I had to dig deep to find something to offer besides plain yogurt, beans and wine.

Sliced baquette toasted in garlic oil, topped with a slice of tomato and a bit of crumbled feta or jamon, and basil. A little piece of gouda and manchego, fig jam and walnuts. That was the last of my bread, tomato, basil, cheese, nuts and fig jam. I had two slices of jamon, only ended up using one. I'm glad I managed to scrounge up something!

I really need to buy some groceries finally, because now even the wine is gone and the only thing I have is plain yogurt and beans. And that one slice of jamon.

I also missed the bronze game. This is why surprise visists suck!

That looks amazing! (o^^o) I think it’s cool that you could come up with something so nice in a pinch like that.


(<_<) My elimination diet is treating me poorly. Rice cakes (the Quaker kind) are helpful but not very satisfying. Today I made me-friendly egg salad and ate it on a rice cake. It was almost like having a sandwich. (@_@)

You might try adding rice to the soup. It adds some nice texture along with some bulk which makes it more filling.
 
I started at 9:30 this morning chopping celery carrots and onions. The beef ragout has been cooking since 10:30 and I'm now reducing it so I can add more red wine. I'll serve it over white rice with a side of peas or Brussel sprouts. I haven't decided yet.
 
I had made a big pot of turkey chili / days ago. Tonight I just blopped some on tortilla chips with cheese and heated up.
Beer.
Low key and really good.
