Cabbage and beans is a really appealing combo to me. Especially in soup or stew form. It wasn't something I had growing up (not that little me would have eaten it), but it feels like something that should have been a home cooking staple.
Hm, I'm working on meal planning and I'm on day two of the three meals M-F. So far it's working out. It's made my Monday a lot more structured and I found that I had extra time after all the other chores because I didn't have to stop and plan dinner (or lunch or breakfast (≧∀≦) ). I had everything on hand (meal planning grocery list) and already knew the method of cooking so it all came together so easy. I'm going to try to stick to this, and maybe branch out to try some new recipes.
Cabbage and beans are good. I'm not using beans today, though. I use a meat substitute made out of broad beans. I don't usually think of it as a meat substitute when I cook with it, because I use it much like I use beans, but that's an easy way to explain what it is I guess.
I really should get back on track with meal planning again. I was a lot better at it when the nearest bigger grocery store was a bit further away. Now that there's one really close to me, I find it more difficult to stick to a plan instead of just popping over there to buy whatever I'm craving at the moment. Not good for the wallet, not good for me, not good at all.
And now that J regularly spends a few days a week in Stockholm, my eating has gone to hell. I have to dig really deep to find motivation to cook just for myself. I need to start emptying the freezer so that I'll have space to freeze a few meals a week for those alone days. Maybe that would solve a part of the really bad eating problem I've developed.

Tomorrow I'm going to attempt to make zucchini noodles. I don't have a fancy appliance to do this for me, so I'm thinking it's going to look less like noodles and more like I have no skills in cutting veggies.;; Any tips would be appreciated if you've done this and have a fail proof method.

I use the ribbons of vegetables like this ( like pappardelle rather than spaghetti) it's quick and I think gives a nicer texture, and much like pasta different textures work, I like the texture of a ribbon often.
