What's cookin', good lookin'? Part II

Bean sprouts. All I crave. So I am stir frying bean sprouts with ginger and spring onion and blood pressure increasing quantities of salt. :)

Bean sprouts are seriously good, though. I get cravings for them sometimes, too, usually paired with ungodly amounts of ginger. :)

Today I got a craving for eggplant all of a sudden. So out of season, so expensive, but had to have it. So eggplant and goat cheese in tomato sauce it is.

I wonder what deficiency I have. I've been getting lots of strange, out of season cravings lately.
 
Lots going on. I cooked down the last of the rabbit carcas for stock. Made some yogurt. Used the left over white sauce from the croquettes to make home made queso to go with tacos last night.

And my honey made a tortellini (sp) bake that we absolutely love.
 
Another meal that is supposed to be healthy. No idea if it actually is. :)

Chicken, sweet potato and spinach in coconut curry sauce. It turned out to have more flavor than I expected. Link
 
Over the weekend was hot dogs with mac and cheese, then pizza. We are getting to the time of year where we are going sun up to sun down so meals will get less foody.

Tonight is pork fried rice to use up some pork tenderloin from last week.

:) Thanks. Cabbage and beans is a really appealing combo to me. Especially in soup or stew form. It wasn't something I had growing up (not that little me would have eaten it), but it feels like something that should have been a home cooking staple.

Hm, I'm working on meal planning and I'm on day two of the three meals M-F. So far it's working out. It's made my Monday a lot more structured and I found that I had extra time after all the other chores because I didn't have to stop and plan dinner (or lunch or breakfast (≧∀≦) ). I had everything on hand (meal planning grocery list :heart:) and already knew the method of cooking so it all came together so easy. I'm going to try to stick to this, and maybe branch out to try some new recipes.

Cabbage and beans are good. I'm not using beans today, though. I use a meat substitute made out of broad beans. I don't usually think of it as a meat substitute when I cook with it, because I use it much like I use beans, but that's an easy way to explain what it is I guess. :)

I really should get back on track with meal planning again. I was a lot better at it when the nearest bigger grocery store was a bit further away. Now that there's one really close to me, I find it more difficult to stick to a plan instead of just popping over there to buy whatever I'm craving at the moment. Not good for the wallet, not good for me, not good at all.

And now that J regularly spends a few days a week in Stockholm, my eating has gone to hell. I have to dig really deep to find motivation to cook just for myself. I need to start emptying the freezer so that I'll have space to freeze a few meals a week for those alone days. Maybe that would solve a part of the really bad eating problem I've developed.

I did notice the protein part and wasn't sure if it was a meat substitute or not. It's kind of like tofu for me, I don't use tofu as a "meat substitute" and instead use it more like a vegetable (or just tofu? :p).

I'm doing the meal planning because it feels like things are going to waste and I hate that. It's been very difficult for me to refuse packed foods from my friend. She makes large batches of curries and always wants to pack some for me to go. Even when I refuse and say we can't eat it she still pushes it. So I end up with a fridge of food in need of cooking and packed meals that also need to be eaten and there's only two of us here and one of us works enough that sometimes eating at home just doesn't happen. At least with the plan I have a very firm stance and can more effectively decline food by telling her there is no room in my plan.

It's also saving me trips to the store. :D
 
After no thought at all, I'm making you chipotle mac & cheese with smoked chicken, computer. *stuffs into DVD drive* I have to go to THE GYM after I visit THE PHARMACY because I'M NOT WORKING today and I won't be able to run very well so I'm GIVING IT TO YOU. I notice you need about 1500 calories, uhm, a week? So no problem.

Tomorrow I'm going to attempt to make zucchini noodles. I don't have a fancy appliance to do this for me, so I'm thinking it's going to look less like noodles and more like I have no skills in cutting veggies. o_O;; Any tips would be appreciated if you've done this and have a fail proof method. :D

I use the ribbons of vegetables like this ( like pappardelle rather than spaghetti) it's quick and I think gives a nicer texture, and much like pasta different textures work, I like the texture of a ribbon often.

Some recipes call for ribbons. :) This particular one calls for more of a spaghetti. It's really light with pesto so I think that the spaghetti type noodles will be the best texture for the meal. Ribbons would be easier and I did see quite a few recipes that called for them. I suppose this means I will have to try different ones. :D
 
Bean soup with oven baked tortilla chips.

I'm made the chips myself. Making the tortillas yourself from scratch is the only way to get edible corn tortillas in my neck of the woods that I know of, so first I made the tortillas, then chip-ified them. Never again, it was ridiculous.
 
Zucchini noodle success! But I do feel like there's something left to be desired. I added actual pasta to Mister's dish so that he doesn't starve, but I didn't do that with mine. I did add a bit of leftover tuna to mine for added flavor. It was good and I enjoyed the dish, but maybe next time I will make a pretty salad or something. Thick tomato sauce might make it better too. Salad sounds like the best application right now.
 
Looking for opinions

I had this strange dish in my head that I just haven't concocted yet because I'm not convinced it will work.
J loves French toast and I have and make it a few times a year for him. We stayed in a quaint B&B many years ago for our honeymoon that served an orange marmalade/cream cheese stuffed French toast. It was Devine!
Since butternut squash is a big favorite of his and it's sweet, I want to stuff a French toast with a honeyed squash mash.

Does this sound too weird?

I also like the idea of using pumpkin as a stuffing.
 
I decided I wanted something quick an easy tonight so I made shrimp scampi yummy but simple :)
