Using my slow cooker to make chicken chili. Chicken breasts, beans, chili seasoning,
salsa, diced tomatoes, corn and lemon juice.

Yum! I think chicken goes FAR BETTER with chilli spices than beef does :heart:

I made this Breakfast casserole today for brunch. I make this a lot. Today I used green onion, red bell, tomato, mushroom, asparagus, cheddar, cottage cheese and parmesan. It calls for bread, so I cubed up half of a hamburger bun I needed to use up and included that. I have used day old garlic bread in the past, and day old French bread. Those both worked extremely well. Super versatile and tasty, one of my favourite breakfast/brunch foods.

A few notes on this recipe. It calls for bacon, just to chop it up uncooked and toss it in the mix to bake. I did this the first time, but never again. I don't particularly care for warmed through, flaccid bacon, so if I am including it I cook off the fat and crisp it up first and then throw it in. Same for sausage. Ham of any sort is also good in this recipe, and I imagine salmon or fish of your choice could also work, but you might want to experiment with how to include it (raw or cooked).

Another thing I love about this recipe is that it's super quick compared to other breakfast recipes. Most recipes call for an hour or more cook and prep time, this one is 35 minutes start to munch. Use any vegetable you like, any cheese, any bread, any protein, just a great all around recipe.

One final note on the recipe :) I hate cottage cheese (sorry, lovers of the stuff!). Squidgy factor, taste, everything. Can't stand the stuff. However! Put it in a casserole or in scrambled eggs and somehow you have a whole new animal. I'm amazed every time I eat it and say... yum :D I highly suggest trying it in this casserole or in scrambled eggs if you want cheese, less fat, and don't think you like it. You might be surprised. I certainly was.

And a note to seela :) I bought that dish at a jumble, brought it home, flipped it over, got out my glasses :D and surprise! It's from Finland! Arabia. My new favourite dish!

It's that special game day and I decided to stay home instead of attending a party with Mister. He likes the all day events and I find them rather exhausting. I didn't want to be bothersome by being antsy to leave before he's had his fun and I also didn't want to be pressured into eating delicious ham and cheese sliders coated in butter and brown sugar (250 calories each :eek:). So I'm home, not watching the game, but still want some tastiness of my own. I've decided to make some buffalo style chicken without all the extra unhealthy stuff and load up on homemade guacamole and veggies. :) He laughed at me because I'm actually quite happy about my food of choice today and really looking forward to a mountain of broccoli.
 
A friend made blinis. Mmmm. I had mine with mushroom salad with a pickle and honey on the side. Mmmm!

February is a tough month for my expansive waistline with all the delicious food traditions coinciding: Runeberg tortes, semlor, blinis and burbot soup.

I saw the pic and I was glad you tried them. :) They are really great, but when you first make them, it can be difficult to gauge if they're done or not.

I'm taking my niece to Disney on Ice tomorrow and she's gonna spend two nights here. I'm making oven pasta with squash for lunch tomorrow, deer stew for dinner. Luckily she gets here so late tonight that I don't have to worry about cooking dinner for her, but I still need to figure out what to feed her on Sunday before she's picked up by my brother.

I'm not so good at kid food.

This is interesting. My preference for fermented breads is due to the fermentation effects to the flour and the glutens, so I'm not sure if simply using fermentation liquid instead of letting the flour be part of the fermentation process will have the desired outcome? I am interested to hear how it goes. Flavour wise, I'm all in :)

And now I don't want to use the word fermentation again for at least a week :p

I purchased a phin cà phê and used it today. Best homemade iced coffee (milk no sugar) I've ever made. I can't wait to get some sweetened condensed milk for Vietnamese style iced coffee. (>_>) I should use this sparingly though...

I got a Green Chef kit delivered as a gift and so far have made exactly neither of the items with the instructions. Instead, I've made about 10 different things that sounded better. I can tell you more about it. The cards are their idea of romance, evidently.

I've begun, this past year, experimenting with salt fermentation; so far the results have been excellent. Currently I am eating cabbage straight out of the crock as a crunchy salad or passing snack.

Isn't that sauerkraut? :) I want to try doing that sometime.

Very similar to the breakfast casserole my mother used to make for Christmas mornings. She also found that sausage and bacon must be cooked beforehand. Her preference was using ham. How much cottage cheese did you use? I'd like to give it a try with that.

How do you like cauliflower? I rarely buy it, but I found some on sale this morning and it needs to be used tonight. :)

I like to steam it until completely soft, then put it in my Vitamix and blend until completely smooth. Add butter, some cream, salt and pepper, a little grated fresh nutmeg. It makes a lovely velvety texture as a soup, or even use it to replace a white sauce or alfredo sauce.
 
How do you like cauliflower? I rarely buy it, but I found some on sale this morning and it needs to be used tonight. :)

I roast it.
Chop into florets. Coat with olive oil salt and pepper. Put on a bakkng sheet into a hot oven at 400.
It tastes almost nutty.
So good.
 
Thanks for the suggestions. :) Anyone ever make pizza crust with cauliflower? It seems interesting, but unfulfilling?

Update: I was so hungry (waiting for the Mister) that I roasted the cauliflower as suggested. I've just shoveled the entire cauliflower in my face. (@_@) So good...

I love it pan roasted to caramelized state as well. Yum! :heart:

The recipe calls for a cup of cheese, I think? I used to measure out half a cup of shredded cheddar and half a cup of cottage, now I just slog in as much as I want :D It always works out, regardless.

Tonight, I'm making congee with chicken, scallions, and mushrooms. I wanted something cozy, and it doesn't get much cozier than congee.
