What's cookin', good lookin'? Part II

We were going to have grilled chicken breasts with semi-sundried tomatoes, feta creme and rosted celeriac and mushrooms.
The celeriac turned out to have bluegreenish mould spots though.

The kitchen didn't hold any other vegetables of interest to substitute with either.

I fried the mushrooms with butter, garlic, pepper and shallots, added a dash of cream.
Then I put them in 4 cocottes and used the last of a piece of strong cheese on top (when in doubt put cheese on it!) and now they are in the oven while the chicken is on the grill.

Curious family members are hovering around the oven right now. A new recipe might have been born.

But, do tell.. semi-sundried? :confused: As in, finished in the oven or a dehydrator? Or not really dried out? I have not heard of these before.

Cherry tomatoes on low temperature for about 40 min, a bit of olive oil, oregano or some other herb you like and sea salt.

Elle, I've never seen them in Italy either but they are very popular here in the fancy pizzerias serving extremely thin crust and real mozzarella while playing Eros Ramazotti and displaying black and white photos of old Italian farmers.
The ones in the pizzerias are have probably spent some time in the dehydrator too, I'd guess but this homemade variety is really good too and easy to make.

The mushrooms turned out great.

I hardly ever take pictures of my food, but today is a one of a kind special just for you.
I should point out that it was my husband who cooked today and it's his plate though. Can't be too compliant :D.

Chicken patties spiced with coconut and cardamom served with rice spiced with coconut and lime leafs. We also had rhubarb chutney from the firs rhubarb from the garden.

No specific plans yet, but I'm thinking of doing a complete week without eating any meat, though fish could be on the menu.

Didn't you do the Whole 30 o something like that a while back?
I don't know if you've talked about it and I missed it, but I'd be curious to hear about what you thought about it.

Yes, I did about ten days on the Whole 30 plan. It was about a year ago and I think I followed it pretty closely but not completely. I dropped alcohol, grains, dairy, and added sugar from my diet for sure. I think there's at least one forbidden element that I continued to eat but I don't remember the specifics right now. I didn't notice much change in energy level or how I felt generally, but I did lose 3 pounds in the ten days. Now, I'm sure that proponents of the Whole 30 approach would say that I didn't get the whole benefit because I followed the plan for only a third as long as is recommended.
