Does it only exist to contrast against good? Does it exist to try the hearts of mortals, to temper them into greater individuals? Does it even exist?

Its own best interests just like any other individual or organization does.

A contrast yes...to measure your values against a defined point you won't cross. Evil gets thrown around quite loosely today, ever hear eating chocolate as, "evil"?
My values are that living things need to live free, in their own accords, facing life on their own terms.
Anything/person that obstructs that end is in my book, "evil"
Anything/person that destroys other living things for greed, hatred, and by suicide murder is "evil".
Sometimes evil is justified, as I can be evil against any example listed above by obliterating their existence.
So you have destructive evil, and constructive evil. The quandry is which side of evil you choose. (The Dark Side, Luke?)

"Evil" is only subjective. A person you may regard as evil will in all likelyhood be admired and accepted by his or her loved ones.

Killing is not evil, since every living thing must kill or destroy to a degree in order to survive. The HIV virus is not evil, although it kills with abandon.

Evil is that which is contrary to one's personal principles, and will vary between individuals. So to answer the question, it only exists in our minds, and serves us as a contrast for good.

"Evil" serves no purpose whatsoever. Pandora was a bitch.

But, actually, evil doesn't really exist. I may call some people evil, but I don't believe a person can be actually evil. There is motivation for every action.
