What do you love about cougars?

Older women, motherly yet seductive; what do you love about them? What makes one cougar character more interesting than another? I ask because I'm considering writing a story with a cougar as the main character, even though I'm not a huge fan of writing from a female point of view. So, please help me understand a fetish for older women from a younger male point of view. (She is not a domme in this particular case though, sorry if fem-dom is your thing. I like reading analytical writing, no need to apologize. But, I'm personally not a submissive or into power exchange (and I have to mentally put myself into the role of the cougar character to create the story), so I'm not going to be portraying the young man as having any kind of power over the cougar. If anything the young man will be a shy virgin that the woman teaches and nurtures to help him gain some self-confidence. To use a ridiculous phrase, she helps him "flower into manhood".
