The trick is using whole milk ricotta, which can be tricky balancing out those flavours. My sister is more of the baker so I’ll probably ask for help

They look a lot like what we call chocolate crinkles! The recipe I’ve used for them didn’t call for ricotta though…was that mixed into the dough, or are they stuffed or something?

It’s mixed and beat in with the eggs, if I’m remembering right. The purpose of the cookie, at least from what my Nonna told me, was to be more of a cake than cookie.

Just on my own baking trials, I found the ricotta helps keep them moist without the greasy side affect that too much butter or oil can cause. There’s also a small tang that I think is heightened by the orange zest being further activated by the ricotta.

I’ll have photos tomorrow hopefully, the stores are closed today oops.
