It is only a couple weeks til Thanksgiving on Nov. 25, and
many of us will be joining friends, families, co-workers,
etc. for a yummy meal of turkey and all the trimmings!

I know there are some great cooks out there......drop in
here and post some of your favorite Thanksgiving
recipes! Everything from turkey to diff. variations on
cranberry sauce, to stuffing, and everything else in
between!

PS........a pre-turkey day tip: for charity, donate a turkey
or some food for a Thanksgiving dinner to your local food
bank.......many, many families and individuals are hurting
this year esp. due to the economy and are not able to
have some sort of dinner without our help! Many local
food banks do accept monetary donations to help with
food purchases if you prefer to go that route.
 
Quick and easy - cranberry/orange relish

This is for those who HATE the horrid stuff from cans! A bonus - NO COOKING!

Coming to NEW England from Ye Olde Version, I had to learn to cook MANY new things...... some of them I found edible, some useful only in the bedroom! (WHO said clam chowder!? Own up!)

The following is my own take on cranberries and the Thanksgiving feast


Two packets Ocean Spray Cranberries (well picked over and washed)

Three LARGE oranges (peeled, seeds removed)

Four tablespoons of honey (preferably, orange blossom)

One teaspoon ground cinnamon

Sufficient sugar to 'taste'


1. Chop the oranges in a food processor (keep handy)

2. Same for the cranberries

3. Add to oranges, cinnamon and honey. Blend with a wooden spoon or spatula in a large bowl (preferably ceramic)

4. Add sufficient sugar, until 'sweet/sharp' taste is right for YOU!


Notes:

You may add fresh orange juice if the mixture is too dry for your taste.

This is served CHILLED to the table.

Btw, this is GREAT eaten on its own - and the effect when spooned over hard vanilla ice cream is best left to the imagination! Orgasmic............


p.s. NO-ONE gets my Mom's scone recipe, do you hear?! Remember Fort Ticonderoga! (Climbs on top of kitchen cabinet, and begins to build barricades)

As a promise to my good friend TJ. I promised that I would post a recipe for Thanksgiving on her thread. Being a terrific cook I hope everyone enjoys this. I will also place a copy of the recipe on the Spring Thread for my best friends there. Now the recipe may look familar but I modify things to my taste...;)

Apple Brown Betty with a twist...:D

Ingredients:

A dozen meduim size Macintosh apples (extremely sweet).
A pint of fresh raspberrys.
2 teaspoons of cinnamon (or season to taste).
2 cups of all purpose bleached flour.
1 cup of brown sugar.
1 cup of unsalted creamy butter.
2/3 cup of brown sugar (second possion).
1/4 cup of boiling water.
Juice of 1/2 a fresh lemon.

I start by greasing (Criso) a deep 9x12 inch baking pan.

Preheat oven to 350 degrees F.

Wash the pint of fresh rasberrys and dry completely with a paper towel. Peel, core, and slice the apples (approx. 1/4 inch thick) and place in the bottom of the pan. Blend in raspberrys evenly in the pan. Sprinkle the apples/raspberrys evenly with the cinnamon.

To make the topping, mix the flour and the 1 cup of brown sugar together. Cut in and mix the soft butter until topping is crumbly. Set aside in the refrigerator until needed.

Now mix the 2/3 cup of brown sugar, hot water, and lemon juice together.

Pour half of the syrup over the apple and raspberrys. Take topping from the refrig. and sprinkle evenly over the apples and raspberrys. Pour the remainder of the syrup over the topping.

Place in heated oven and bake for 60 minutes.

Serve warm. (optional - with Haagen-Dazs Vanilla ice cream...;))

Here's mine that I have done for a long time for Thanksgiving. The fruit and Jello type can be varied infinitely.


1 16 oz container small curd cottage cheese
1 small pkg; dry Strawberry Jello
1 20 oz can pineapple chunks; drained
1 banana; sliced into rounds
1 handful red flame seedless grapes; cut in half
1 8 oz container Cool Whip

In a mixing bowl, add cottage cheese and thoroughly mix the DRY Jello with it. Add all the fruits and gently stir into the cottage cheese mixture. Fold in Cool Whip and add to serving bowl. Refrigerate at least two hours--can be made the night before.
 
This is a new Thanksgiving recipe for our family!

Hope you enjoy it. Btw, all the recipes sound great!

Pumpkin Layer Cheesecake

Prep time: 10 mins.
Bake time: 35-40 minutes or until center is almost set.
Cool time: 3 hrs – overnight

Ingredients:

2 – 8 oz pkgs. Cream Cheese
½ c sugar
½ t vanilla
2 eggs
½ c of canned pumpkin
½ t cinnamon
dash of each: ground cloves and nutmeg
1 graham cracker pie crust

Mix cream cheese, sugar and vanilla on medium speed until well blended.
Add eggs and mix until blended. Stir pumpkin and spices into 1 cup of the batter.
Pour the remaining plain batter into the pie crust top with pumpkin batter.
Bake at 350 degrees for 35-40 minutes or until center is almost set. Cool in refrigerator for 3 hours or overnight.

AA, I remember a fruit salad mold my mother always made on Thanksgiving, I think it is time to find it and make it for the next generation. I remember it was my favorite part of the meal as a kid, well that and the brownies!

I agree Toni, they all seem wonderful - especially the cheesecake. My sweet tooth is smiling I can feel it!
 
There are ONLY going to be about 17-18 at our Thanksgiving gathering. Our extended family is very large and most of them will be spending it with their in - laws, working, etc..

Here is our holiday menu for the day:

Turkey, Dressing, Cranberry Sauce and gravy
Ham
Mashed potatoes
Stuffed celery and jalapenos, yummy!!!!!
Deviled eggs
Pineapple and cheese salad
Fruit Salad
Green Bean Casserole
Either a veggie tray or salad
Bread and/or rolls

2-3 chocolate pies
1 regular pumpkin pie
1 sweet potatoe pie
1 -2 pumpkin cheese cake
Pecan pie
Cherry cheese cake

And like you, Cate, I am already getting hungry!!!!

As you can see our family always makes plenty, especially in dessert section of the menu!


I CAN'T WAIT FOR THANKSGIVING!!!!!!!!

I promise I will Jen, I haven't been posting on the boards at all until the last three weeks. Hope you are feelin' better--hugs n smooches.
 
My family is alot smaller, but this is one that they DEMAND that I make. It is well worth the effort and they disappear quickly.


One-hour Buttermilk Rolls (Makes 18 Rolls)

2 pkgs. (1/4 oz. each) active dry yeast
¼ cup very warm water from the tap (115 degrees-120 degrees)
1 ½ cups buttermilk, at room temperature
½ cup packed vegetable shortening
3 tbs. sugar
1 tsp. salt
½ tsp. baking soda
4 ½ cups all-purpose flour

Preheat oven to 400 degrees. Butter three 6-cup muffin pans. In bowl stir yeast into warm water until dissolved. Stir in next 5 ingredients until combined. (Mixture will be lumpy.) Stir in flour, 1 cup at a time, until soft dough forms. Turn dough out onto lightly floured surface; knead until smooth and elastic, 8 minutes. Let stand 10 minutes. Divide into 18 pieces; divide each dough piece into 3 pieces, cover dough not in use. Roll each dough piece into round ball. Place 3 balls in each muffin cup. Cover; let rise in warm place until doubled in bulk, 30 minutes. Bake 15-18 minutes or until golden. Cool in pans on racks 10 minutes. Remove from pans; serve or cool completely on rack.
 

Sweet Jesus! Tonitits and AA both your recipes sound delicious...:D I am going to try both the holiday. Tonitits you combine two of my favorites pumpkin pie and cheese cake. AA ya gotta have those buttermilk rolls to soak up that good turkey gravy. This in fact is a dangerous thread waist size wise....:eek:

I have to dig up another recipe from my data base...:D

Thanksgiving Cranberry n' Peach Cobbler

Found this one last year, everyone seems to enjoy.

1 spice cake mix
1 tsp cinnamon
1/2 tsp nutmeg
1 cup butter
1 can Whole Cranberry Suace
1 Can Peach Pie filling
1/2 cup chopped nuts

mix cake mix, cinnamon & nutmeg, cut in butter to resemble corn meal. fold in nuts. set aside
lighly butter pan. (i use a 13 x 5 x 2).
mix cranberry sauce and peach pie filling in dish. sprinkle cake mixture on top of fruit. bake 45 minutes at 325 d.

serve over vanilla ice cream.
substitute apple pie filling if you like. or a yellow cake mix. either way is yummy

Spanish Rice

This year will go traditional with
ham
sweet potatoes
cheesy corn
green bean cassarole

with desert of course

Master Turkey carver here:

How to properly carve a turckey quickly and make a great presentation.


1)First remove stuffing from front of the breasts.

2)Dislocate the legs at the knee and hip then use the knife to cut them off at each of the joints

3)Dislocate the wings at the joint closes to the breast and remove at the joint with a knife.

4)in One cut, cut teh front of the breasts off right at the wish bone.

5)know cut the right breast off starting from the breast bone and following the knife as close to the ribs as possible. The breats should come off in one piece.

6)Repeat the same for the left breast.

7)Know you can slice each breast as if it where a roast of beef.

8) For presentation you can place each sliced breast (big side facing each other in the middle and tappering away towards teh ends of the plate.) then add the legs and wings to the plate at the sides.

7)Serve the rest of the dark meet on a seperate plate.


Enjoy.


ps.. to cook a Turkey in a 1/4 the time. Make your dressing seperate. Then cut the turkey from the bone, tie the breasts together and roast. This is how gourmet cheft's do it.

Those both sound great! We always have a traditional Thanksgiving but for Christmas it varies. One year we had Italian, last year it had more of Mexican flair to it. Since my mom died 2 yrs ago we make the Christmas dinner a little easier, more finger foods so we can actually spend more time visiting. That is the only time my brothers, sister and their families all get together.

It is a salad that my aunt makes, she said that she made it last year, but I don't remember it or maybe didn't get around to it, lol. I will ask her for the recipe and post it here.

Because my older brother will either stay in OK or be with his mother in law, my sister is having dinner at her house with alot of her in-laws and her mom, my other brother always spends it with his father - in- law, my dad, me and my son always go to my aunt's. One of her daughter's manages a cafe and will be having to work that day. I have another cousin, not her daughter, whose mom died numerous of years ago she and her 2 sons and one of their gf so actually considering how large our family is and how spread out everyone is this is a very small family gathering. We used to have holiday dinners that were probably 50-75 at least! We usually eat around noon. By that time we are all ready to eat and then of course, the guys have to watch FOOTBALL!!!!!!!!!!!! And then of course, you have to come back for some more food! Alot of times we will watch movies or play games. This is the first year and quite awhile that I don't have to go to work that night, so it should be nice and relaxing for me, I hope!

I love pumpkin pie and I like cheese cake, ok, but my son and alot of my relatives LOVE cheese cake. So when we found that recipe we decided to try it and it is sooooooo good!
 
Jaded1--NO mention of diets here until after the holidays! LOL This one is totally decadent, however, not for the kiddos! You won't believe how well the Kahlua goes with the pumpkin!

Kahlua Pumpkin Pie

1 (9 inch) pie crust -- unbaked
1/4 cup Kahlua
1 cup Evaporated milk
1/4 cup Corn syrup (or Louisiana Kane Syrup, if you can locate it)
1/2 cup Brown sugar
1/2 teaspoon Salt
1 1/2 teaspoon Pumpkin pie spice
1 1/2 cups canned Pumpkin
2 Beaten Eggs

Line 9" pie plate with crust and chill. Preheat oven to 450F. Combine milk, kahlua, sugar, corn syrup, spice and salt. Add pumpkin and eggs and set aside. Bake pastry for 7-8 mins until lightly browned. Pour pumpkin mixture in to crust slowly. Reduce oven to 325F. Bake about 40 minutes.

Optional topping:

Beat 1 cup whipping cream with 2 Tbsp kahlua until stiff. Turn into serving bowl and drizzle 1 Tbsp kahlua on top.
 
Don't know what you call this one, but had it last Christmas and it is delicious.


1 pound fresh or frozen cranberries (uncooked)
8 ounce package miniature marshmallows
2 cups sugar
1 (20 ounce) can crushed pineapple with juice
1 sliced banana
1 8 oz container Cool Whip or whipped cream

(If using frozen cranberries, thaw first.) In a food processor or blender, grind the cranberries. Add the sugar, crushed pineapple and marshmallows. Let mixture stand overnight in the refrigerator(the marshmallows will absorb all the juices and won't look like marshmallows after sitting overnight.)

Just before serving, fold in the sliced banana and Cool Whip.
