I read The New Adventure Ch.1 its a story in the Mature catagory and it was fantastic, both the characters were very well put together and it seemed to be leading towards a ch.2. However, that has been over two years ago now. I hope someone could take a crack at writing ch.2, I'd really like to see where it goes.

There is unholy many unfinished stories on this site - what is of no surprise to me, given it's nature. Few lucky stories have the later part published as commercially available ebooks, but most will likely never be finished.
Unsurprisingly, requests like this is frequent as well. However, they ask the impossible. And no, I don't even think firsthand about the legal issues: the author holding rights on the story, it's characters, exact interpretation of the scenario, etc. Even with the complete disregard to all that, or explicit permission given, any envision of continuation by someone else wouldn'tbe the true thing, even with the original author consulting it will another story than what the author had in mind when written as much as they did.
So the best thing you can do is flex your imagination and continue the story for yourself. I know, it isn't as fun, it is damn hard to surprise yourself, and even harder to not let your own kinks to ruin the story much too soon.
If you insist on a written and published extension, I think the way that can be done, would be to present situation very similar to the end of original story (with not only character names and exact surroundings changed but also some unique twist added) as the status at or shortly after start of an independent story.
