And I would add to Vivi's comment by including the genetically modified wheat that is now in every type of bread product and so much more. Foods you wouldn't even associate with it contain wheat germ from this new variety of plant. The genetics were modified to produce greater yield but the side effect is that our bodies cannot properly digest this new wheat. As a result, things like Celiac's disease is rampant. And those big 'beer bellies' on people that is so commonplace? You guessed it....wheat related, as are so many allergies to gluten. It even ties in to un-healthy blood sugar levels that lead to type 2 diabetes.
I know I'm going back a bit, but...
Celiac disease is showing up more, much like autism, due to increased screening, and so even people that don't show symptoms are being diagnosed with it, causing the numbers to go up.
Also, genetically modified wheat isn't being grown commercially anywhere. A few companies are working on a GMO wheat, but none have really been successful yet.
Hybridized wheat is, but there haven't yet been any studies confirming (or even really pointing to) that causing any increase in Celiac disease, or gluten sensitivity. On top of that, gluten sensitivity and gluten-free diets have turned into a trend right now, like high-protein Adkins diets before, or like "cleanses" to remove "toxins" that no one can name or find or explain why your kidneys and liver aren't already getting rid of them are now, as well.
There are people with legitimate gluten issues, but their numbers are so few that it is almost literally impossible that all the people on these gluten-free diets need to be. Give it another few years, and it'll be replaced by some other new diet fad.
