no sage and onion stuffing in sight - oh well, i'll improvise and not stuff. there's ginger and rosemary, garlic, lemon, smoked paprika, bay leaves, basil.... sure i can do something tasty. the fresh french beans are so yummy it seems almost a shame to cook them, and i found some good old-fashioned lard to do the roasties in. carrots, green cabbage... all good fresh stuff. :cool:
 
I'll be popping some moose breakfast sausage into the oven in a few minutes. it would prolly make a fine addition to stuffing, also.

I'd hate to ask the obvious, but moose? And yeah, take it back to domesticated meat.

It's a common thing to have breakfast sausage made from some of your game meat that might just go to be burger up this way.

Don't knock it until you've tried it.
 
Bison is extremely tasty though. The husband put bison and filets on the grill, without me knowing. I chose the bison.
 
What the critter eats makes a huge difference too. I used to get moose from an area that had a tonne of wild hazelnuts, best meat EVAH!

If the swamp donkey's are mostly eating water plants, then meh yeah better in burgers & sausage mixed with pork fat and seasonings.

Oh yeah, my nickname for moose are swamp donkey's. I used to think I wasn't the brightest bulb in the woods that day, then I started bumping into moose. They're generally cute...100m away. Not so cute when you bump into one portaging a canoe on your head and he takes it as a challenge. 25' away.
 
Wild Boar sausage is horrid, but people eat it up like crazy. Never quite understood the fascination.

Now, don't get me wrong, those fucking boars need to be removed from existence (ever since one killed a truck I was driving I've dislike them), but their meat is horrid.
 
I like bison and venison. I've never tried rabbit, but I'd be game.

In the freezer section of the grocery, they usually have domestic bunnies. It's the other white meat. Fairly dense and lean. Braising is usually a good method for cooking.

I'm going to check. I've never seen it, but I've also never asked. There's also a whole sale meat market close by where I could inquire as well.
 
Roasted Rabbit over an open flame has its place in the world.

Plus...you get four rabbit's feet to pass out!
