It's a common thing to have breakfast sausage made from some of your game meat that might just go to be burger up this way.

Don't knock it until you've tried it.

I wasnt knocking it, just wanted to know the taste... closest I would have got was bison, not that I remember how THAT tasted.

They are the only place we've been able to find alligator, kangaroo and ostrich in NH.

We get our bison closer to home at a place that carries also carries elk and grass fed beef among other meats.

I've never had moose.

There was always moose in the freezer when I grew up. Beef was way too expensive. Caribou and salmon, too. And some ptarmigan and spruce grouse. Occasionally there was a hare or six.

Ugh no kidding.

Now I'm trying to recall my beer poached rabbit recipe I pulled out of my ass when I shot a rabbit and didn't have any wine...might've had thyme & rosemary sprigs in it, and some slices of lemon. Used the poaching stock to make an almost Bernaise thick butter & wine sauce.

I was a big fan to starving Gen X'ers lol

Rabbits have never been plentiful around here, my father and my son have always hunted deer, grouse and pheasants. For awhile they dabbled in turkey hunting and we often have trout available from my son and his friends (I vividly remember teaching them how to clean fish).

I've had bear, I wasn't a big fan, it was very greasy. I enjoy wild boar, but we usually buy it.

My father shot an elk in Idaho a few years back that was delicious, but it was expensive for the out of state license and getting it butchered and shipped back here.

We have wild hare in Alaska and only feral rabbit near places where people let them loose. Many people call hare rabbit, but they are mistaken. I used to raise bunnies for the freezer and I can say that the bunnies were much tastier and more versatile to cook with than wild hare.

I did this when I was a kid. Often it was the only meat in the freezer. You get really good at figuring out ways to fix it. You can substitute rabbit into almost any recipe which calls for chicken though stews and pies are the most common way to fix it.

Rabbit sausage is delicious! Big links like brats or breakfast sized, either way it's tasty!
 
I raised rabbits for a couple of years, insanely easy to do. A rabbit in a dutch oven at 250, package of taco seasoning over the top and a couple of inches of oj in the bottom is hard to beat after 3 or 4 hours.

Then, I suddenly ended up with hay fever and cleaning the rabbit house got to be a sneezefest that last for several days. After a couple of times feeling like total shit for days after a cleaning, I just didn't want to take it anymore. The working girls turned into roasters and the stud was renamed Stewart.
 
what's for dinner is the eternal question that can never be fully answered!
 
There are several good places in DC if you enjoy thin crust (which I do).

Of course I'd have to put on pants and take an uber to get the best...

Putting on pants for pizza seems like a lot of work.
