Gonna do a fried chicken sandwich in a few with the crunchiest of fresh cole slaw, sweet pickle relish and melted cheddar on a multigrain burger roll. Might fried egg-ify that beeyotch, too. ;)

What kind of chicken?

I did some breasticle strips in a large pan. Seasoned them with a little salt & pepper and heated the pan with a small amount of oil.

The instructions were interesting;
  • Heat one side uncovered for 1 minute
  • Turn over and cook for 10 minutes with a "tight" lid
  • Turn off heat, THEN turn over, cover again and let sit for 10 more minutes.
Turned out very juicy and tender.

Sounds almost like the method for cookin chicken Parmesan. I like the onion and garlic at the end. Good cheat. : )

Oh, I thought you were making "fried chicken", not chicken in a frying pan.

But, for chicken in a frying pan, I use skinless boneless thighs from Costco. They come in a big-ass package from the freezer. And each is coated with a thin bit of ice. I throw a couple frozen ones in a nonstick pan on medium low and put the cover on. They thaw in 10-ish minutes in the steam. Once thawed, season em and fry with the cover off. Sometimes there is too much icemelt water in the pan and it needs to be removed. The chicken fat is plenty of grease for frying the parts.
