Except, I rarely have shortening, so I use all butter, and about 50% more than the total fat the recipe calls for. I've done some experimenting with it, and I haven't fully settled on the exact recipe, which is why my biscuits are decent. I mean, they're good, but not great, not yet. Maybe I should just get the damn shortening! The main thing really is to not over handle the dough.

Good biscuits can be hard to find. Jefferson Drug in Oak Ridge has great biscuits in their little diner. If you're in the area and craving them early, before the 9 in the morning when the drug store opens, the back door to the diner is open for business at 6:30 or 7a. Local knowledge gets the biscuit and country ham, of course.
